Easy Slow Cooker Blueberry Applesauce Recipe

Last week I had to bring in snack to my son's preschool class. I sent in graham crackers, blueberries and apples, apparently I sent in way too much because at the end of the week I got back a bag of apples and blueberries. I didn't want to waste the food so I cored the apples and tossed them in the slow cooker with the blueberries, vanilla extract and a little water for an easy applesauce recipe. After a few hours in the slow cooker I put it in the blender and then put in the fridge to cool. It was so good and my kids enjoyed eating alone or on top of toast in the morning. I can't wait to give this a try in the summer after we go fruit picking!

Blueberry Applesauce Recipe Ingredients:

10 apples (any variety, mine were sweet so I did not add sugar)

Pint of blueberries

1/4 cup of water

1 tablespoon of vanilla extract

Directions:

1. Wash all the fruit.

2. Core the apples.

3. Place the apples and blueberries in the slow cooker with water and vanilla.

4. Leave in the slow cooker on low for 4 -5 hours (times vary, done when all the fruit is soft).

5. Blend in blender until is at desired consistency, store the blueberry applesauce in an air tight container in the fridge.
