Healthy Snacking: Zucchini Muffins for Kids

I love packing these healthy zucchini muffins kids' lunches as a snack or for grabbing one myself on my way out the door in the morning. This healthy zucchini muffins recipe makes for a great way to sneak in some veggies and fruit!

Healthy Zucchini Muffins Recipe Ingredients

2 c all purpose flour

1 c brown sugar (I used light brown sugar)

2 tsp. baking soda

2 tsp. cinnamon

1/8 tsp. nutmeg

1/8 tsp. ginger

1/8 tsp. allspice

1/2 tsp. salt

(I substituted 2 1/2 tsp. pumpkin pie spice for the cinnamon, nutmeg, ginger and allspice)

2 c grated zuchinni

1 apple cored, peeled and grated (I used a medium gala apple)

3 eggs

2 tsp. vanilla 

1/2 c unsweetened applesauce

1/2 c vegetable oil

 

Directions For These Healthy Zucchini Muffins For Kids:

1. Mix all dry ingredients then add the zucchini and apple. 

2. In a separate bowl combine wet ingredients.

3. Gradually add the zucchini and apple mixture to the wet ingredients.

4. Bake in lined muffin tin at 350 degrees for 20 minutes (or until toothpick inserted comes out clean).
